Appetizer and Wine Matching for the Holidays - 3

Another of my favorite easy recipes, watch these get snatched up in a hurry.

BLT Bites

24 cherry tomatoes
1 pound bacon, crisp-cooked, crumbled
1/2 cup chopped green onions
1/2 cup mayonnaise

Cut off the top of each tomato opposite the stem end.  Scoop out the inside to form a shell.  Drain upside down on paper towels.  Combine the bacon, green onions, and mayonnaise in a bowl.  Spoon the mixture into the tomato shells.  Chill until ready to serve.

These will go so fast, so you might want to double the recipe.

Wine recommendations:  Any red wine with a little smokiness to it.  Some I have had would be:  Latcham Estate 2006 Cabernet Franc from the Sierra Foothills, Melipal Malbec from Argentina, and Sobon Estate 2006 “Cougar Hill” Zinfandel.
